Rack of ribs cooked in apple juice in the instant pot. Salad on the side. The ribs were pretty good. Not as good as cooked in the smoker. But 80 percent as good, and cooked in half an hour.

I also tried something new in terms of easy/quick route. Tried country ribs on the grill, with A-MAZE-N smoker maze a couple nights ago. Definitely added a good smoke flavor. Added some sear on the grill, then finished in the oven.

Next night, I made wings with the smoker maze. Also good smoke flavor.

Didn't have to mess with my smoker. Will do some more of the pre-smoke, then grill, or bake. Doesn't replace low and slow though.

Pulled some sockeye and coho out of the freezer, rolled in seasoned flour, egg wash, and panko flakes. Served the fried salmon with rice and roasted broccoli. Plenty of sweet Thai chili sauce on the side of course.
