I picked up a 27.5+ Specialized Fuse and it gets most of the miles. It's not nearly as fast as my 29'er but it's just fun to ride. The 3" wide tires absorb a lot of the little bumps and provide much better traction on the steep, loose stuff.
Go to a bike shop and pedal around on a few and see what you like. Lots of bike shops have demo bikes.
Also, get a good pair of bike shorts and chamois or a liner. I've had good luck with both chamois and gel but I rarely ride more than 3-4 hours.
I rode a lot on pavement and trails. Good fun and exercise. Just went by a Harley shop this weekend....see why they call em hogs......damn near all of em had fat people on em.

Still have the same bike.....Trek 8000 hard tail........spent a week back then at Crested Butte CO
Condo was at 9K'......we rode up from there.........

And no suspension at all Steel frame mountain bikes of that era can be worked over into decent road touring bikes today

My son and I just bought ‘19 Trek Roscoe 8 bikes. Came with mid grade derailers and drop post seat. Front suspension has air. If you are planning on progressing to trails the drop seat is a very nice feature. Push the lever, push the seat down and your ready to tackle the downhill without ripping your berries off. Push the lever and the seat is there for the uphill or flats. Our bikes are hardtails. We are piling up the miles on them on road and trail. Since the first of April I have about 145 miles behind me. Hope you find the bike for you and wear it out.
I have no problem with people having a "hog" either. Not pointing anyone out, just an observation in general. But how do we, as grown men, get to the point on the Campfire where it is literally impossible for any thread on any subject to end without a slamfest, someone getting accused of being gay, or a few GFYs? Kinda sad actually. Standing by for someone to accuse me of being gay for asking this question LOL.
