I like how you think. I'm doing six racks of St. Louis spare ribs, one for my wife and I and the rest for family and friends. Also going to do some smoked beans and kielbasa. If I'm breaking out the big smoker, I might as well load it up.

I tried going vegan, but then realized it was a big missed steak.

I just did two shoulders and a brisket this week so I'm thinking something simple and quick for the 4th.
Burgers a bag of Zapps and a big fuggin' watermelon sounds about perfect. LOL.

i'll be doing a pulled pork overnight on friday. corn on cob, beans, slaw and maybe a rack of ribs on the fire to go with it. still not sure on who's coming. i have about 14 cases of good homebrew, a half gallon each of gin and vodka, sack of limes, couple sixers of tonic, jug of cranberry juice and 12 pack of Squirt. this has to last me all week though. probably need to hit the liquor store for more gin. love my gin and chronic's.

I am frying fish, potatoes, and hush puppies along with a pot of pinto beans and cold slaw. I am having my parents over and my dad who is 88 can eat the fish easier. I did the fish back on his birthday and couldn't believe how much fish a 88 year old man can eat.
I am also doing a couple slabs of ribs and a brisket for a friend who is helping me change the fuel pump in my truck Saturday morning.
A gun in the hand is worth more than the entire police force on the phone.

13 lb brisket just went on the BGE. I'll get 5-6 hours of smoke on it then off to the oven for the night. Should be done about 0800 -- it can easily rest until afternoon.
Other than that? Potato salad, salad and watermelon with mint and a blueberry tart for desert.

BBQ’d chicken legs, burgers, chili, jalapeño poppers, corn on the cob, watermelon, pickled beets, beer cheese and pretzels, blueberry pie, ice cream.....
Supposed to have a few friends and their families over. They all chickened out. Scared of the ‘Rona.
We’re gonna yak paddle in the morning, eat and drink , big fire, lame fireworks, and be happy we don’t have to deal with anyone else. 🙂

How's that work out for ya ? Pic ? Ended up hitting 195 at 0600 so 14 hours total. It's resting wrapped until the afternoon event. Didn't slice it but while wrapping it had the right "feel" so hopefully good.

I’ve got 15lbs of brisket on the smoker. Coming off at 0800 to rest till 1300 lunch. Homemade peach bourbon bbq sauce, smoky onions, and cowboy candied peppers to go with the sandwiches. I’m salivating just typing this!!

Put dry rub on St Louis ribs last night. Just loaded them in the smoker with oak wood. Wife is making a cold bean/corn salad. Water melon and blue berries to finish.

Debated between the Dinner Tonight thread and this one. But, since it is the Fourth, and this was our holiday dinner, here seems to fit best. Went to the local farmers mkt this morning after a mile walk with the dogs and wife around the Modoc Nat Wildlife Refuge. The few vendors there had no zucchini for the grill, so I went with two kinds of beets and some carrots. Meat was tri tip coulotte steaks, sprinkled with a bit of lemon pepper, garlic powder, onion powder, and some smoked paprika. on the coals: and on the plate: Them dang big red beets might have been better than the steaks, which were mighty tasty as was the rest. We've had roasted beets from the oven many many times, this was our first on the coals. I think my wife wants them that way all the time now! Happy BD America!

So the daughters sprung a surprise bbq on us after all three working all day. . All I had to do was fire up grill and supervise the grilling and smoking. They even brought some of them safety fireworks over. Someone got a pic of the meat grilling i'll postup later. Menu- Freedom eggs Applewood smoked Brentwood sweet corn Marinated grilled portobello mushroom Red, white and blue cheese potato salad British Bangers, pesto and jalapeño sausages Chocolate pie and cheese cake fruit tart.
