thanks for all the information. I have been cold smoking my salmon for the last 5 years, but left my smoker, that looked like an outhouse in soldotna when I moved. I have been using a propane smoker, but it doesn't work as well as my old one, so I'm happy we are going to build one. I have some fish in brine right now that were caught last night.
