That's what I first thought of too Brad.
That guy's skill is impressive. I don't butcher for a living, but my uncle did. Glad that he taught me how to hunt and we butchered our own game.
I'm guessing that this guy has a dad or uncle and continued in the family business. Just a guess. But he does this for a living and very well.
One thing I've asked every full time meat cutter is what their favorite go to blade is. It varies like anything. Most prefer high carbon to stainless. Thin stock, That's the norm.
One thing I like about his blade is that its all belly. He draws the line along the divisions and its sharp. He can cleave with it too. Hand is on the back an extension of his hand.
My favorites are recurves with a big belly, but a good point for multipurpose and precision.
I don't know what its called, but like the rest of you, it looks like one of the Eskimo blades. Wouldn't be surprised if it wasn't a hand made custom. I've never seen one used by anyone around here.

I cut meat for a few years and knew old timers who could cut meat like that. Nearly anyone can cut meat, but doing it quickly, safely and properly is difficult.

Dunno who made it or what they call it, but it’s a cross between an Ulu and a Serbian Chef’s blade. Very close to either/or.
You Should see how guys take apart the giant palagics like sword and blue fin at the Fulton market. Scimitar style blades mostly. Much longer. They peel those fish apart in seconds with nary ounces left on the racks. Cool stuff.
