Forgot to take pics, but fried fresh eggplant out of the garden dipped in egg then dredged in progresso bread crumbs in olive oil. Layered it over thin spaghetti noodles and marinara with more marinara over it then a pile of sargento shreded parmesan with chopped fresh basil from the garden on top.
Made bruschetta with garden tomatoes, garlic and basil out of the garden, salt, pepper, olive oil and parmesan.
Baked some Italian bread with butter and garlic salt with mozzarella and Italian seasoning to eat it on.
Anybody else like eggplant? Love it. I char it on the grill and mix with garlic and mash it up. Vegetable caviar. Love egg plant parm but have to be careful not soak up too much oil
