I made a pretty darn good pot of chili this eve. Thin cut well marbled Snake River Farms New York Strip sold discounted. What type of beans? Kidney beans. Of course. "God's in his heaven; all's right with the world."

Made a seafood ceviche with scallops, shrimp and cod. It was OK but there are other things I'd rather do with seafood. I used a single diced Fresno chili from the garden and was a bit surprised at how hot it was raw. I've roasted them before and it mellows them a lot. Also orange and lime juice, avocado, tomato, garlic, coriander, salt and pepper in the ingredients.

Think we are good for a while with these Thai chilis; Kept a dozen for fresh & will roast some too, but these we are air drying the traditional Italian way !

After spending the day floating the river fly fishing (brutal winds made it tough) we hit a Mexican joint that made some of the best chili verde I have had from a restaurant.

That looks awesome!! How long did you smoke it and at what temp? I smoked it at 265 for a little over an hour, then put it on the grill for a minute or two to crisp up the bacon. You could cut it with a fork, it was so tender. Haha!
Piss off......tell us about that knife.... That was one I made momma last winter. Seems to be holding up pretty well so far!
