Made a seafood ceviche with scallops, shrimp and cod. It was OK but there are other things I'd rather do with seafood. I used a single diced Fresno chili from the garden and was a bit surprised at how hot it was raw. I've roasted them before and it mellows them a lot.

Also orange and lime juice, avocado, tomato, garlic, coriander, salt and pepper in the ingredients.

After spending the day floating the river fly fishing (brutal winds made it tough) we hit a Mexican joint that made some of the best chili verde I have had from a restaurant.

Smoked up some bacon wrapped caribou tenderloin and backstrap. I rubbed it with some garlic salt, pepper, cayenne, and brown sugar before putting it in the smoker. Damn, it was tasty!

I smoked it at 265 for a little over an hour, then put it on the grill for a minute or two to crisp up the bacon. You could cut it with a fork, it was so tender.
