So, inspired by all the fine chiefs on the 'fire I've had the locker save all sorts of cuts we did not used to worry about.

How would you good folks do neck bones?? (Not asking for a friend either). laugh

I’d toss some celery, onion and carrot in there, along with a couple cloves of garlic, salt and some bay leaf, boil the crap outta them, shred the meat off the bones and use the meat and broth as the base for a hearty beef barley soup.

Agreed with the above. Braise em. Could also be cooked down and used as a filling in tacos, enchiladas, tamales, etc.

Haven't done beef bones but browned pork neck bones thrown into a pot of Sunday Gravy to serve over macaroni is a treat!

Oven roast the bones, before adding to the stock pot.

Much richer flavours !

Pressure cooker for 30 to 40 min. Beef stock some carrots, garlic onions with it

Make stock. As others have said, roast em, then in a big pot with aromatics and herbs and cook for a while.

Rinse thoroughly

Season with salt and pepper

Lightly coat with oil

Broil till well browned

Cover with chicken stock

Add onions and any other vegetables you wish

Cover securely

Place in 350 degree oven for 4-5 hours checking liquid level about every hour

During the last hour when you check the liquid level add a corn starch slurry to thicken the liquid.

Replace cover and put back in the oven for 1 hour

Serve over rice.

This recipe works with both beef and pork neck bones.

I pulled a bunch out of the freezer today.

Gonna make a bunch of shredded beef for tacos. Will do a version this in the Instapot.
