My wife, the white gal with Mexican blood, likes them canned black olives.
I prefer Kalamata................must be 'cause in the way way back olden days my peeps come from the Balkan Peninsula.
Now, If I can get ahold of some tree ripened black ones, them are delish when I cure them myself. Them canned ones are chemically ripened.............yuck.
Them nice Castelveltranos are yummy too.

Green olives are gross as hell.
Pimentos mixed with good cheese is good. There's a variety that has a bit of a "buttery" flavor. You might like that one. Sorry, I know of none with hints of oak and a background of black cherry and chamomille notes.
