Can someone show me a picture of their digital calipers showing how to read off the lands measurement? like what does 2 thousandths off the lands really look like.

sorry, I failed math and where decimals should be.

.002". Hair on your head is around .003".

First digit to right (other left) of decimal point is tenths .100
Second digit is hundredths .010
third digit is thousandths .001
forth digit if provided is ten thousandths .0001, but most calipers only read by halves .0005

1 inch reads 1.000 or 1.0000 for 5 digit read outs
1 inch plus 2 thousands reads 1.002 or 1.0020 for 5 digit read outs
30-06 max is 3.34 inches reads 3.340 or 3.3400 for 5 digit read outs

So, what would an "Off the lands" measurement look like?

3.340 oal touching lands
3.338

is this two thousands off the lands?

I usually think in terms of .015 to .020 off the lands as being reasonably close without contact. That would be 15 to 20 thousandths. So if I'm hitting lands at 3.340", I'm wanting 3.325" to be 15 thou off.
