Best duck (not fuuck) I've had was up on the Slope last winter. Some commercial pre-cooked packaged deal they said. It was most excellent. Never desired hog head over the alternatives.

Chop your ducks or geese into smallish pieces. The more bones, the better. Dont breast them out, skin them. Get a big pot, I've used a canning pot when I wanted to cook a couple geese. Put some vegetable oil in the pot over medium heat. 2-3 tablespoons, maybe a little more or less. Chop a large onion into the oil, salt and pepper it. Let that cook until the onions look a little cooked then put the bird or birds in, you can cook a ton of teal at one time. Stir occasionally, never turning up the heat. Let it cook a long time, maybe an hour, maybe longer. The onion will reduce the gamey flavor. Takes forever and the house will reek sometimes when you are halfway through. But the results are delicious. Marge was never big on recipes, I learned by watching her.

She did spring snow goose and even that tasted good. Which takes some doing.

I bet that was mighty tasty, Boom. I've always thought, if they are made "right" they would be good but I gave up waterfowl hunting because I apparently did not know how to do it.

I eat what I kill even if it sucks.


Duck sucked. Goose wasn't bad but pretty dry.
