Anyone ever make turkey sausage? A Friend just talked me into taking 4 tame turkeys that were hanging out on the hood of his daughters new challenger. Got about 50 lbs of of meat off them and was thinking of mixing it with pork and making sausage. Just checking to see if anyone had any ideas. Happy thanksgiving!

I've made breakfast sausage from the dark meat from wild turkeys. It was good. I was advised that as I was adding seasonings to fry a small bit to taste it and adjust the seasonings accordingly... usually made 2-4 adjustments before I got it where I wanted.
Just plain ground turkey and pork makes good burgers... get pork that is fatty.

I made link sausage for years using ground elk and pork. I smoked it and it was very good, but a lot of work. Whatever someone charges to make sausage is well worth it. I wouldn't make it again for $50.00 a pound. And recipes for spicy hot sausage? Forget that, I tried several and had to come up with my own. Many people don't have any idea what hot, spicy, and tasty really is.
