We originally ordered a 10 lb Prime Rib for Christmas, but we ended up with a 11.5 pounder. No prob, I thought. There will be more leftovers. In spite of having an extra guest, we ended up with quite a bit more leftover been than we anticipated. I thought I'd put up a thread asking all those folks on the Prime Rib thread what do you do with the leftovers? I'll go first: usually my first stabs at it are: Take the well done parts and reheat and cover with a Texas-style BBQ sauce like Cooper's in Llano Take a slice, cover with blackened seasoning and broil . Take a slice, and broil it and serve with the leftover Zip Sauce. The latter las become a favorite at our Christmas dinner. https://www.allrecipes.com/recipe/48919/kims-zippy-sauce/

I thought I'd put up a thread asking all those folks on the Prime Rib thread what do you do with the leftovers? Go to bed, ya insomniac! ...Take the well done parts... And this is where the masses decry you as an uncircumcised Phillistine for having ANY parts of afore-referenced chunk o' meat being cooked past [maternal fornicating] bloody / twitching / moo-ing. Well Done? Good LORD, man! In any event, finely dice some potatoes, crisp in a skillet, with diced prime rib remainders thrown in once said starches are nearly soft. Add a melange of peppers, if you must. Prime Rib Hash aint no bad thing. All the best, FC

My go to for most stuff like that is drop them in bowl and micro wave 'til hot enough, then put a wee bit of salt and vinegar on top and eat with my fingers whilst watching a movie of my choice.
These are my opinions, feel free to disagree.

No matter what time I go to bed, 0400 sees me with my eyes wide open. I haven't slept in for years. Well done? I always have a quite a bit around the edges that are well. I sear for 15 minutes and then cook until the center is medium rare.

If it was a bone in standing rib roast, there is no better soup than prime rib soup made with the bone and the trimmings

I cut off the bone and slice thin with a slicer. Makes great sandwich steaks.

I don't like killing it with spice and long cooking times. You can probably achieve the flavor with post seasoning. Your starting with the best of the best.

Gently warm up in the oven not over cooking it and eat it. No spoiling it with other spices ...
