I’m in need of a new bench and I’ve always had a bigger more permanent one on my place but I’m considering going portable so I can move it around easier. Just not sure how much stability I’d be giving up?

I used one about 6 years ago or so. was trying to shoot targets at 300 yards. My memory is it wasn't steady which you can imagine is a problem just looking at it. I ended up setting up sandbags on the tailgate of my truck and the group shrunk. Alot.

Yes, The lodge we stay at for prairie dog hunting in SD has them. They are stable enough to shoot prairie dogs at long range. I've never fired anything with substantial recoil off one, but don't think it would be an issue.
