I skinned one once thinking to make Possum and sweet potatoes. The smell told me nope, ain't happening. Never tried possum, but it sounds like they smell like jack rabbit.....

Got to catch them live, put in a rabbit hutch and feed them sweet for for a couple of weeks to clean out the dead cows, horses and such...
Thump 'em in the head, scaled and scrape like a hog, then gut and cut off the extremities and bake with seweet taters and onions. You hungry enough, they are passable, coon is a lot better.
