I say indoor because it’s too damned cold to play outside with the Kamado.
I bought a chunk of brisket this morning - the fat end, maybe 3 lbs. I’ve got a good oven, lotsa frying pans and an Instant Pot.
I’m looking for interesting recipes to turn this into a masterpiece.

Season and bake in a roaster @250 with beef broth until I.T. is 160*. Wrap tightly in foil with some of the roasting liquid until I.T. is 205*ish or when a probe goes in like butter.
PS It's not very interesting, but it does work well.
Know fat, know flavor. No fat, no flavor.
I tried going vegan, but then realized it was a big missed steak.

Trim fat to 1/4". Salt & pepper and cover meat with sliced onions. Then I cover the onions with thinly sliced lemons. Wrap in foil and cook at 275° till meat reaches 160°. Uncover and remove onions and lemons. Roast at 325° till meat temp reaches a bit over 200°.

Trim and season your brisket the way you like it. Take a roasting pan, slice couple of onions into rings and line bottom. Put brisket on top fat side up. Take 2 cups of your favorite bbq sauce and pour on top IF you like sauce. Allows all the juices and fat to run underneath and season the brisket Cook at 250 till fork tender. Helluva lot better smoked with mesquite but works great as an alternative.
