looks great. I add water and dried milk or soy to hold the moisture. Fat I use pork shoulder myself.

Bet those will be great ! We were going to try brats with our bounty of venison but decided to do all meat stiks instead.. Some with regular seasoning,,,some laced with heat and the remainder with Teriyaki ..then off to the smoker and cut into stiks.
