Winter deer, elk, and any season pronghorn hides are carrying hollow and very brittle hair and with any activity will be dropping detritus. Cookie has an early season summer elk hide, and it's still doing fine after about 20 years. Slick, shiny, and durable. Winter hides are best if initially turned to buckskin.
I'm not aware of a cost effective method for hair on conversion to buckskin or usable leather.
