A separate small nitrous tank under the hood with a dash operated on/off switch between your normal fuel supply would be good with whatever engine you choose for drag racing.

An Art Morrison chassis with a 9" Ford rearend, and a modern front suspension is the stuff! A Chevy LS motor, a modern transmission.
There is a local fellow here with a '67 Nova, modern chassis, tubbed, tubed roll cage, automatic trans, 9" Ford with a spool, and a big block Chevy with twin turbos............has turned 187 mph in the quarter, and can be driven on the street! Screw the mileage!
