SLO has changed a bit since my 1980 - 1985 days. I still have primers I bought at the gun shop on Higuera then...

Beauty of tacos, to me, is meat with minimal additions. Don't matter if it's chicken, pork, or beef. I do prefer beef, shrimps, and fish, but am not opposed to the others. Add a bit of salsa/pico and onions and I'm good.

I do like a chicken Baja burrito though. No rice, no beans. Just meat, pico, and guac. Great food.

That is my favorite part of the chicken for tacos.
