Looks danged good JG ! Hard to beat either Axis Deer or Oryx. Best I’ve ever had except for prime Angus Beef.

Love that Axis, and oryx for that matter. I just season mine with a simple salt, pepper, garlic mixture, a dry brine sort of thing for about an hour before I cook it.

Friday night was chicken enchilada night. I haven't made enchiladas of any flavor in a long time. the filling: And just out of the oven, flour tortillas on the left, corn on the right and center. Half dozen each (horizontal olives vs vertical ones!) . GregW, thanks for the hint about the Herdez Cremosa salsa. I had some leftover Herdez Salsa Verde and mixed the two together to soften the tortillas in, then added more of the mix over the top of them all. And dressed the ones on my plate with that Cremosa. Probably pick up another jar or two for future use. Oh, they were last night's dinner too, and maybe this afternoon's lunch. If my 25% Mexican wife doesn't get at them first.

Did lamb leg on the Kamado for Easter dinner, with a ghee and cilantro drizzle, plus a Mediterranean Orzo salad. Plus Slavyanka’s Easter bread. She wanted me to do some pork in case she didn’t like the lamb. Told me next time, just do the lamb. Lol.

I had a homemade microwave poached egg sandwich. 3 eggs and two slices of honey wheat bread. Add some salt & pepper and not bad for a lazy old fart. 🤠

I mean, there's friggen Korean bbq tacos and other "fusion" stuff. I might copyright, trademark, or patent that "dagochilada Suizas" label though.
