We have at least 10 local Italian pizza/sub joints around here. Hell of a lot better bread and real ham, not “turkey based ham product”

Its not sitting out all day. It's set into the top of an aluminum freezer case. Some put ice in there too. And they change out the bins once a day and take temps too. Worked at one when i was in college. Food safety people came in to check us all the time. Wife is a graduate of Subway U. Yep, that's a real thing. So often, I just read and laugh. Someone posted about mayo and sour cream. Commercial mayo is actually pretty low risk. It is very well preserved, to alleviate the risk in the ingredients. Sour cream? Again low risk. A cultured product, the production actually provides some preservation. Along with added preservatives. That comes from Serve-Safe. The organization that provides food safety training/certification. Yep. If its late and you open the SCream and its got that grey/green mold on it you can just skim it off and put the rest on your tater.
