Thanks STX for posting Bart's recipe. I thought I had saved it years ago, but was not to be found on the hard drive.

I'm surprised no one has mentioned marshmallows yet. That's because they don't actually go in the chili during cooking The little colored marshmallows go on each individual portion on top of the layer of strawberry cream cheese

What am I missing? This says 1.5lb of meat. Wouldn't that be like 3 servings? And it says to use 4 tablespoons of chili powder.

I start out browning about 6 lbs Deer or beef sometimes both 2 quarts of home grown canned Roma tomatoes 2 cans of store bought tomato sauce 1 can diced tomatoes 1 quart jar of Pace picante Then comes: the other volume builders 2 cans of kidneys 2 cans of pintos 1 can of prepared sauce-beans 1 can of red beans 2 whole chopped vidalias about 5 cloves garlic minced 2 or 3 home grown dried serrano pepps (pulverized) I always cooked chili for construction crew of 8-10 people and a handful of semi-polite office rats.

Another vote for sausage, green chili powder, and hatch green chilis about 15 minutes before serving.I usually use a game cuber on some sirloin the like and use coarse ground chuck.Beans are optional. Diced jalapeños, onions, and cheese for garnish. Wife likes sour cream.
Regards,
Kris

Another vote for sausage in the mix. I usually use 1/2 hot Italian, sometimes breakfast. Make a big patty when browning and let it sit for a bit so it gets a good crust before you break it up, helps add some texture. Also, I’ll plug Pendery’s in Fort Worth as a great source for ground chillis and blends. I’m a fan of top hat and Fort Worth lite.

I pan fry 2 pounds of Johnsonville hot Italian sausages and then slice them up and throw them in there for a different kind of meat, spices and chunks.

I also add a teaspoon of Mexican oregano.
