That moose? It sure looks good. What kind of smoker are you using? I had never really done much smoking but decided I wanted to try this year so I bought the small portable Traeger. Best money I ever spent!

Very nice !

I do something similar with goose breast --- either corned or pastrami -- both cured then smoked. Great sandwich meat.

I still have a moose brisket in the freezer. My SIL claimed it months ago to play with in the smoker but seems to have forgotten about that project.

I may do something similar to what you did myself. Too bad for him. smile
