I also make Heat-n-Eat Breakfast sausage. Great with an English Muffin for on the go in the AM.

i get on a kick once in a while and do it. i need a better grinder though. mine is slow and clogs easy. i use con yeager spices. they have the best i ever tasted and they're sized for 5lb batches which is about right for my crew. i use the caulking gun style of stuffer too so thats a bit of a PITA.

I don't have a grinder so I just buy meat already ground to make sausage. Life is too short to not have a grinder Agreed... And a smoker... And a slave to clean the place up when your done...

I made smoked spicy elk link sausage for years, but no more. A lot of trouble and work. Whatever good sausage costs, it's worth the expense.

I like breakfast sausage but it gives me heart burn.
I think its the seasonings. Maybe the sage or something.
When we have breakfast sausage made I always request that they use half the normal seasoning.

I make a few different sausages every year. Italian, chorizo, breakfast, etc. I made bratwursts and smoked sausages a few years back and they turned out great.
