We had the middle son's wedding here yesterday so catered Mexican. Tonight there is seven here remaining so burgers are minutes away from the grill. Beer and Pinot Grigio outside, a Manhattan inside...

Asian noodle soup; ![[Linked Image from i.imgur.com]](https://i.imgur.com/22Nt2Fq.jpg) Homemade or can home-opened?  I suppose the first. Would you mind sharing the recipe? Thank you? Bring Pho broth to a boil, add raw shrimp & brown (wholewheat) ramen noodles, once shrimp & noodles are al dente, add veges of choice. I did saute the mushrooms in a separate pan. Simple, quick & tasty.

I made the chile relleno casserole again that FatCity67 posted. This time, I had separately cubed up a buncha boneless skinless chicken breasts and cooked em’ in a cast iron skillet on the stovetop. I added some fire roasted diced tomatoes and let them simmer with the chicken after the chicken was done. I made a good layer with this mixture into the casserole. It all turned out perfect. Plated and topped with a big dollop of sour cream and some good salsa, it was a damn good meal…!
Every day on this side of the ground is a win.

Sopita, bbq pork blue corn tacos and frijoles de la olla. I made the chile relleno casserole again that FatCity67 posted. Sliced turkey (precooked from Costco), turkey and chicken gravies (jars), mashed pot (Idahoan), stuffing (Stove Top), corn (frozen), peas (frozen), and whole green beans (frozen).
Cheap chocolate chip ice cream, chocolate shell, fake whip cream, and cherry on top for dessert.
Kids, wife, and myself had no complaints. Sometimes simple and easy does the job!
