First time cooking quail for me… I’m a pheasant guy but I may now be converted
Bachelor cooking - 2 quail southern fried, with some garlic shell pasta, bread, and I forgot the wine…

Fred (buddy of mine) said they were good fried - and he was right, the drumsticks are pretty darn small though.

I’d rather eat quail all day long than a tough old pheasant.

I like to filet the breast meat off. Then season flour, dip meat, pan fry, breast nuggets plus the legs. Then make gravy from the drippings and plate it all up with mashed potatoes.

There was a steakhouse (sadly no longer) in Stephenville, Texas that served up a bacon wrapped, spatchcocked, citrus bbq glazed and grilled quail. I worked there for 30 days straight and probably had that 2 or 3 times a week.

Quail are great to eat. I also enjoy the Cornish game hens as well.

Man those were good !! Next time I need to do some good rice with them, I’ll try filleting the breast - I never through about making Gravy with the drippings.

I’m heading out again on Friday for more Quail….
