I tried this for the first time the other day, not to bad but I would cut the smoke time down to 35-45 minutes from the hour the recipe calls for. https://heygrillhey.com/smoked-chex-mix/

I have a shotgun so I have no need for a 30-06.....

Curious if after a day or 2 of sitting if the smoke mellowed out. On cheese, you can't eat it the day you smoke it. Many say to let it sit in the fridge for a few weeks to let it mellow out before eating.

I don't know, you do make a good point. I am going to open the bag and let it air out a little. I put it in a zip lock bag as soon as it cooled to keep it crisp so it has never really had a chance to "mellow". I will do that now.

I leave cheese sit in the fridge for 2-3 weeks to mellow.
