Do they make a Ruger American Predator in 308 that takes the AI mags? I have been wanting a bolt action rifle in 308 , preferably something less than 9# with scope. Suggestions on other brands are welcome, would love to be able to keep it under $1,000 to save money for glass.. Left handed availability would be a bonus as well. I know I'm asking alot.

According to Ruger you're out of luck, flush mount rotary mags on in LH.

Buy a Tikka, and get some extra magazines, forget the AI magazines If you really need 10 rounds get some Waters

I have a Ruger LH 308 RAR (which I'm going to sell) and wonder if an after market stock might give one the ability to use AI mags, if you could get the right bottom metal for it? Any ideas?

I’m not sure what your pricing is like down there, so may be way off on your budget. But a LH Tikka CTR, (or regular LH Lite, if really counting ounces) with Mountain Tac BM would be a simple way to your goal. Another bonus on buying the CTR, you’d make back a good bit of your purchase price selling the CTR BM & mags.
I've seen more well-shot game lost with TSXs than any other premium bullet.

Yes, indeed. In fact, a factory stock with removable BM module, and Ruger’s AI module would also do the trick.
