Monday. Andouille and smoked ham hocks in the freezer. Decided to go traditional Creole/Coonass (put the beans to soaking last night).

That overnight soaking is the ticket. Allows a good strong simmer without skins coming off and makes for a very creamy bean. Good on you! Excellent.

Love Red Beans and rice!
Made it 2 weeks ago in my pressure cooker.
I use Emerills cooker and his recipe. No ham hocks, but I would like that.
With the pressure cooker, no need to soak the beans!
90-100 minutes on high pressure and it's done!

Beans around the campfire.

I'm making beans right now. Red kidney beans mixed with some Indian substandard red kidney beans.

Couldn't get a ham for under 3 dollars a pound so using pork chops fried lightly into the bean pot. Water 1/2 n' 1/2 tomatoes juice . Boil all day keep covered in water. / juice / simmer. Yummy ,will try rice on top ,or corn Will try some butter.
Oh yah onions +.
chopped celery.
