I think the Irish left Ireland so they wouldn't have to eat corned beef and cabbage.
Give me a good beef roast with potatoes and carrots any day.

Found some moose loin chops in the freezer. They gotta be 3 years old. Thawed them out and grilled them. More tender than any filet mignon.

Crawfish cakes. Wow. Served with a spicy mayo/remolaude.

Pork chops, caesar salad, and corn.

Here's what I did, from memory.

Sautéed 1/2 onion, 1/2 red bell pepper, 1/2 orange bell pepper and 2 sticks of Celery, finely chopped. Got them softened up, added some garlic, chopped parsley and a few chopped green onions and then took off heat and cooled.

Chopped up two pounds of crawfish tails, mixed with above, and a healthy done of Cajun spice, salt, 3 eggs, some breadcrumbs, about 1/4 cup creole Mustard and 1/4 cup mayo. Make patties and sautée in hot oil/butter.

Mix 1 cup of mayo with juice from 1/2 lemon, and some Tabasco. Add smoked paprika, garlic and onion powder and salt and pepper. Mix and let it refrigerate for 1 hr to let come together.

Never had catfish before, but damn, that’s straight up sexy right there!! 👍
