It's almost ramp digging time,ramps are coming up. I dig a few and clean them up and put in water in refrigerator and they stay good for a week . Now I want to try pickling them to keep long-term. See lots of recipes,but most put too many things in for my taste. Anyone here ever pickled them? Was thinking of half water half vinegar,bringing to boil and pack pint jars and pouring liquid in and sealing. Any reason this wouldn't work? Anyone who has done it I'm interested in how.

We can a pile of them. Vinegar, Water and a little salt as a base. I make all different "blends" to about half. Some dill in some, red pepper flakes in others. Put 2 whole habenero peppers in 2 pints last year, this year it will just be one. Flaming hot leaks/ramps tore up several different body systems.....

Tried it last year---- left the entire ramp greens and all. White vinegar , water, salt, pepper, and some spices .. Had them in hunting camp in Nov. They were OK. I'll work with different spices. I did not boil them first. Pickled right after a good cleaning.

I've made onions with water,vinegar,salt,allspice. Just warmed enough to dissolve salt, turned out good but always ate them in couple weeks. Might try same with the ramps, I'd be happy if they would keep for 8 months or so.What is the longest you have kept a pint? Just wanted to have some in fall for something different.

Where do you find RAMPS in PA ? I am from WV but it is too far for me to travel for Ramps now that I am 84 and have cancer.. from the looks of your location you are about 150 north of where I go in WV to get them.. if you know of an area near me . you can PM me I wont tell anyone and wont take but a few of them.. /

Pickled ramps are like candy to my oldest son. Vinegar, sugar, salt, pickling spice and ramp bulbs in boiled water. Heat and seal. Then hide the jars so the ramps have time to age a bit and take on flavour.

I'm a big fan of pickled ramps too.
Sugar, salt, and some red pepper flakes go in mine.

---- I just dug these small ramps today. Cheese omelette's with ramps in the Morn. I'll dig some more and pickle these young ramps.

I haven't dug any this year yet, plan to this weekend depending on rain. Plan on picking some and did some reading on freezing them,so will do a bag to see how they do . I've been planting them for a few years to get them started here. They are coming up nice but will take years before I can dig any .

DW06--- Photo was taken last year---- I'm lucky -- I'd guess 90% of the green in the photo are ramps. Maybe 1/6th of the size of the ramp patch ?
