Went on a trip to Lake Erie this week. We caught plenty. We split up the filets. I have about 4 pounds which I’m separating into 1lb. packages. What are some good ways to cook walleye that have worked for you?

Basic oil in a cast iron pan. Walley is a great, neutral/natural fish and doesn't need a ton of "seasoning".

So a basic batter, even a beer batter is good and be done.

2 cups flour
⅓ cup corn starch
2 teaspoons salt
1 teaspoon paprika
1 Tablespoon baking powder
1 - 1½ can beer - I like a lighter tasting beer, pilsner, AAL or even an American wheat

Mix flour, salt, paprika, baking powder and corn starch together
Add beer and mix
Mixture should be thick, like pancake batter
If mixture becomes too thick, add a bit more beer
If mixture is too runny, add a bit more flour

Beat some eggs. Throw saltines in a ziplock bag and take a rolling pin to them until they're just about flour.

Dip fillets in egg, and then into the ziplock, and then into the frying pan. Oil, butter, or whatever you like to use in the pan.

Easy, and tastes great cold the next morning.

Microwave. Salt, pepper and butter in a microwave safe bowl. A couple minutes on each side not layered. If you don't like them that way, you don't like fish but enjoy the seasoning.

Scramble a couple of eggs in a bowl, pour a half a cup of milk in and mix some more. Baggie filled with crushed saltines, dip fillets in milk, drop in bag shake till coated. Deep fryer with peanut oil until floating medium golden. I like to keep the fillets about half dollar size around.

Shore Lunch is good, and you can get it everywhere. Zatarains is fun to try also. I cube mine into bite sizes, into some milk, roll them in the dry mix, and fry them up. I use a Fry Daddy outside on the deck to keep the smell out where it belongs. I use canola or peanut oil.

Sometimes I grill the filets whole, with Chef Paul's Seafood Magic on them. Some people around here make walleye packets in tin foil with vegetables but I am not huge on that.

Batter is a huge pain in the ass, messy, and a waste of good beer.

My neighbor has an oven fry recipe that she insists is best with Sunshine brand saltine crackers. I supply the fish, she supplies the rest. Its a good trade.

Best walleye I've ever made was done like so-

Flour or your choice of pre-made mix such as Drakes, Shore Lunch, etc., and bread crumbs, mixedaround50/50. Add seasoning to dry mixture to taste. Dunk fillets in milk then dredge in dry mix of crumbs/flour etc. Release into 375⁰F oil.

For simplicity,
Shake on some chipotle and lime seasonings,

Then bake for about 15 minutes,,,

Soft shell taco time, Avocado Cilantro and fresh lime or what ever you prefer.

Or if frying,

Dip in flour, then beaten egg, then bread crumbs ( I like Panko crumbs)

Hopefully you bleed out the fish on the water, then make sure to ‘zipper’ out the bloodline..

Lake Erie walleye fillets prepared properly are always outstanding..

Use this. Dip in milk, then fry. Add nothing to it. Doesn't need it. Best fish fry evah!!!

I like them baked. Spray a glass cake pan with non stick salt and lemon pepper to taste. Bake 10 minutes at 350. I then drain the water that cooks out then put a couple spoons of butter on them bake another 10 minutes spoon melted butter over them when served.
