I don't think they fry in bear grease (at least I hope they don't), but there's a bar/restaurant/casino in Helena that serves some of the best fried chicken gizzards I've ever had, and I've had a lot. Forgot the name of the place but I suspect it's the only one in town that is famous for its gizzards.

Not sure about the bear grease but I do love fried chicken gizzards... the best I ever had were in Perry Georgia at a small chicken shack about 35 years ago... black owned and my dad and I were the only white guys in there but WOW they had some great fried chicken and fried chicken gizzards

There are some good, real good, gizzard houses in OK. One not far from my house. Love me some gizzards.

I have one of those small hand blenders. I put an egg into a glass and add ample amounts of onion and garlic powder with a generous amount of Tony cachere’s creole seasoning with salt and pepper. I blend it until it takes on enough air to about double it’s volume then soak the gizzards. It don’t seem to wash off as bad that way before I dredge in the flour.
The bear was a young one, right around 180lbs. I got a little less then 2 gallons of lard off it. Everything I’ve eat off it has been pretty darn good so far.

I buy chicken gizzards all the time. For my dog. I cook them up, and mix with her kibble. I don’t eat that stuff myself.
