Back when i was in high school (and dinosaurs roamed the Earth), the cooks at our cave would fry real chickens for hot lunch. There was always a huge pan of hearts and gizzards from which we few who knew good food could help ourselves to our hearts' content.


Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.

My mom said when she worked in a restaurant as a cook she pressure cooked gizzards 20 - 30 minutes first before breading and frying. The pressure cooking first was the reason they always turned out good and tender.

I’m kinda partial to the hearts, but usually stewed and made into soup with noodles or rice. Fried livers were a staple at our house growing up. Need to get me some and fry ‘em up.

Most grocery stores here sell “Chicken Hearts and Gizzards, Mostly Gizzards”, but the International store sells packs of all hearts.

Also feet.

My duck hunting buddies swore the best fried gizzards came from coots. I called BS, until they had a gizzard feed, one night. MUCH more tender than chicken gizzards, and bigger to boot.

Deep fried and dipped in ranch dressing. Game changer.

Chicken livers are OK, but for a real treat give me some fried gizzards! They are kinda hard to find around here now. Used to be most any Walmart deli had 'em, but not so any more.
