Made from the pork loin, think Eggs Benedict, or Egg McMuffin

The term Ham, actually means the whole hind quarter.

This Ham ( hind quarter) can be smoked, fresh, sugar cured, salt cured , etc. all referred to as Ham

Canadian Bacon is made from the loin, so it technically is not ham, some refer to cured and smoked pork loin as Back Bacon, but most refer to it as Canadian Bacon.

The pork loin was from Sam’s Club, $1.78/Lb.

Bought two, smoked one whole on the pellet grill last week to 145*, cut half into 1 inch chops and the other half sliced super thin for pork sandwiches.

This one brined for 7 days then smoked on the pellet grill @200* until internal temp of 145*.

I always wondered how Micky D's got the perfectly round Canadian bacon on the egg ma'muffins?

(and Roger I have 4 venison roasts in the Pastrami rub curing as we speak.)

They say everything happens for a reason.
For me that reason is usually because I've made some bad decisions that I need to pay for.
