These were pretty good. Mozzarella balls have zero flavor. Probably go with pepper jack next time.

Smoked for an hour at 225 and upped to 350 for last 30 min.

Maybe try smoked Mozzarella instead of the fresh.

You could go Fontina, Caccio Di Roma, or even Chèvre

3 tbsp bread crumbs
1 tbsp salt
1 tbsp ground pepper
3 tbsp rub
2 eggs
