Piment d'Espelette is the chili they used. Italian Grandfather put fennel it in every thing and Mom followed suit. At least it seemed that way to me as a kid. Didn’t want to take time to shred it fine so put it through the grinder with the coarsest blade. With some veggies on the griddle made for some good fajitas.
