OP erich Campfire Tracker Joined: May 2002 Posts: 4,079 WA to NM	Up in beaver camp we'd make beaver jerky to snack on while we were running the lines. Beaver liver, onions and biscuits for breakfast, beaver jerky for lunch and beaver stew or stewed beaver and dumplings for dinner. Took jars of dried veggies(keeps the mice out) with us no cooler other than a big kettle in the creek. After the first shot the rest are just noise. Make mine a Minaska Heaven has walls and rules, H-ll has open borders

The liver is very mild much like calves liver, and it is about my favorite liver to eat, they are surprisingly large spanning the whole width of the beaver. Rabbits and squirrels are rodents and while we're at it, muskrats are very tender much like rabbit or chicken thighs. They are vegetarian like a deer living on tree bark, twigs and leaves. I seem to remember a story about one of the guys with Lewis and Clark hunting the beavers specifically for tail meat.

OP erich Campfire Tracker Joined: May 2002 Posts: 4,079 WA to NM	No, that is a large -very large most are in the 15-40 lb range, the one shown was 65# but I've caught one that was in the 80's. Beaver tail is cartilage, tendons and fat. I've never tried to eat a tail but have read of folks charring them over the fire, pealing the skin and gnawing on them, I think mainly for the fat content. There isn't a lot of fat on small game, I've heard that you can starve to death on rabbits do to the lack of fat. The skin on the tail can be tanned into a very tough leather, and acquaintance used to make wallets out of it. Beaver pelts are sold stretched round and you measure from edge to edge diagonally across the leg holes, both ways and add the two number, this guy measure in the 70's and at the time was worth $1./inch not a bad days wage for one beaver.
