I've used a razor blade for work for 45 yrs, averaging on bad cut about every 11 yrs, don't see how someone can work wearing gloves when it comes to cutting stuff.

You want Dowellife or Schwers gloves.

We fillet a lot of catfish around here and that's what we use.

Whatever you choose make sure it is at least Level 8.

I use the lightweight rubber-dipped gloves when filleting. My concern is maintaining a grip on the fish rather than concern for getting cut. I also lay my fish on a towel when cutting fillets.

None. I’ve never seen a need, it’s not a race.

You probably won’t need one on your dominant hand as it will be holding the knife. Great idea to have one for the off hand as it may get in the way. Might save the day on a wilderness hunt.

I'll wear a cheap rubber style work glove on my left hand filleting a big batch of fish, grabbing them through the gill plate will wear a sore on your thumb. I don't put my hand in front of a knife on fish or game.

None. Usually take my gloves off if it's cold.

I don’t use any gloves when filleting fish, I need the feel and dexterity of my bare hands.

I have a bunch of pairs of the rubber dipped Atlas gloves both the insulated and non-insulated ones. The insulated ones with imitation sheepskin are great for cold days when the metal wheel and cold air suck the heat from your hands. The non insulated ones I’ve used when filleting. I’ll also use (rarely but usually when fishing eggs) latex exam gloves. I don’t use gloves to protect my hands from cuts. When dealing with a bunch of limits of Rockfish (Sebastes) the non insulated Atlas gloves are nice since those spiny bastards can really poke you up with their “toxic” spines. 😫

Nitrile exam gloves. I keep my hands away from where the knife is.

I use the Nitrile as one can build up an allergy through wearing of Latex gloves. When it hits it is sudden and far too often severe. And it may not occur when you are wearing Latex but when someone else is. I know one person who went into anaphactic shock when a nurse assisting with the surgery was wearing Latex gloves. Almost lost the acquaintance.

I learned how to cut meat wearing one of these and used one for 24yrs after in the meat room.

Cutting meat for me is VERY slow without one now.
