I have tried the search and came up blank...saw shauns and I know ed m makes it ..can I get a recipe from anyone here...I hate to cook but it looks so good going to give it a try ...thanks...bob

Mine is New Mexico green chile stew. The recipe that Craigster posted in another thread is pretty much how I make it:

Green Chile Stew

Only differences are, I try to use pork broth that I've previously frozen, pork fat skimmed off same instead of oil to brown the meat-onions-garlic and, usually, pre-roasted and chopped green chile (Young Guns brand).

Make sure you use a waxy potato like reds, not russets.

For chile verde I usually keep it real simple. Dredge pork chunks in flour, put in crock pot, add plenty of minced garlic and enough chopped green chile to cover the meat even after it's been stirred together, salt to taste, cover and cook on high till it's simmering then turn to low and simmer until meat is fork tender. Usually at least 4 hours.

No tomatillos, no nopalitos, no onions, no other fancy chile or jalapenos, just straight-up NM green. No cumin, no oregano, nothing but garlic as seasoning. It's my purist recipe, lol. Thick and meaty enough to roll into a burrito.

If cooked in a pot on the stove I brown the meat and garlic in pork fat or suet first. Maybe add a bit of broth if it gets too dry. Usually don't have to in the crock pot, which is why I like that method.

Availability of chile. Find a Mexican store in the nearest big town for the good stuff. Most regular grocery stores probably won't have much except jalapenos and maybe some serranos and anemic Anaheims.

We have been getting rain. Pork is my favorite green chile. Follow Shaun's advice especially the waxy potatoes.

Most of your questions have been answered. I do a variation on green chile stew with pork and call it “green chile chicken”. Simply brown off a parted out chicken And nestle the parts down in the green chile sauce to braise.

When you make green chile sauce for enchiladas, use ground meat or at least I do. I prefer pork. Leave out the potatoes and use the sauce to layer your enchiladas that you soft fry(corn tortillas). Sauce, freshly minced onion, grated cheese (I use cheddar), repeat for about two to three layers. Fry an egg for the top and garnish with chopped tomato and lettuce
