"The Warden" asks if there is a reason to cut the eyes out of potatoes, or is it just traditional? (No real reason)?

All the ones I've peeled the last couple of
decades has come right off during the
peeing process. What few I have right now
have little sprouts coming from the eyes, but
I just push/rub em off before peeling and
there's no problem

That is an excellent question! I have been doing that for years, figuring they were bad and tough. They most likely have the most nutritional value lol

I take them out simply to avoid any specs or discoloration in whatever you’re making. They won’t hurt you.

What Happens if Eating Potatoes with Eyes?

If you eat sprouted potatoes in low consumption doses, excess glycoalkaloids often lead to vomiting, diarrhea and abdominal pain. When consumed in larger amounts, they can cause low blood pressure, rapid pulse, fever, headache and even death in some cases.

I was told by the old ones they can make you sick, same with tomato plant... I never experimented, just take them off and eat the potato, I only throw away a potato if it's getting mushy and dried out.
