Mesquite charcoal and apple wood. That pile is about 14” wide by about 18” deep. I could get 12-14 hours if I keep the temp low enough.

Holding steady around 255 for now. The dampers are sealed pretty tight so I can raise and lower as needed.

What temp, and how long do you smoke the chicken boobs? I'm about to smoke a rack of ribs today, and I just might add some chicken to the mix. I use a Charbroil gas grill turned way down low for heat, and a smoker tube with pellets for the smoke flavor. The ribs take about 4 hours at 275-300 degrees to get "fall off the bone" tender.

I usually try to do the chicken titties between 250 and 280. Maybe too warm. But it’s always worked for us.

My Turkey turned out delicious. Took a little longer than expected with the arctic blast coming through but was worth the wait.
