The best way I've found to prepare the stuff is to slice it about 3/8" thick, and simmer it in a skillet for a few minutes in enough water to just cover the slices. Dump the water, which renders a lot of the salt out, and then brown the slices on both sides just a bit. Tastes almost like canned ham that way. Not my favorite breakfast, but with a couple of fried eggs and a plate of biscuits, it chases the hungries away all morning.

I love it. I entered this in a SPAM ancillary at a steak competition several years ago. Smoked it on my mini Green Egg as more of a joke than anything, but it was tasty and got 2nd place. The crown roast of SPAM.

I've eaten a lot of it. When hunting, it's good fried for breakfast and makes decent sandwiches.

However, it loads you up with salt, fat, and calories. Unless you've very active, it's a gut buster.
