Thanks, definitely not like Mom cooked it. I always associated it with a tough dry cut. It turned out much better than I remembered as a kid.

BEANS:
String them individually and soak in cold water for 30 minutes
In the meantime, sauté an onion cut pole to pole in olive oil, garlic. Add tomato. Basil and a little oregano
Boil beans till tender, about 8-10 minutes then ice bath
Add to onions and tomato. Add S and P to taste. Crushed red
CHICKEN:
Find untreated, all natural, small breasts under 8 oz
Lightly pound with a butcher knife or meat hammer into a 1/4” cutlet
Brown on high till done on both sides (couple of minutes)
Remove.
Sauté sliced mushrooms in the pan with a bit of olive oil or butter
Deglaze with white wine and reduce
Add chicken stock and reduce.
Add capers and Italian parsley
Finish with a pat of butter, S-P
Return chicken to the pan and bathe.
Plate and enjoy!
Forgot to tell you about the lemon Juice! Bout half a lemon! Sorry
