Tip for soaking dried chilies and not meant as a knock to robham. Soak dried chilies in hot water, filtered if tap taste is questionable, chlorinated, etc. Then taste the water before using for blending. Many times it will be bitter. If it is then use your pork stock for blending or a combo if the soak water tastes ok. Strain chilies through fine sieve before using. You can add another depth of flavor if you slightly roast the dried chilies before soaking. I’m offended… Fats is correct. It’s best practice to strain the blended peppers as sometimes they can be bitter. I think it’s the skin that’s bitter. And the sieve will filter the skin out.

Hello Ed, sliced eggplant, rolled in flour, egg, then homemade bread crumbs from the Ol lady’s sour dough bread, then air fried in the oven. Not much for veggies but it was damn good. Gonna do er again with fresh yellowtail collars/bellies tonight

Zucchini pancakes are another favorite. Now I am hungry and I should be in bed. Last swig of a Manhattan and a CBD pipe blow and lights out.
