I can’t really tell the difference between red and white. Sometimes they pay us more for white, sometimes less. Just glad we get paid. The bigger fish we get tend to be white.
I would have said halibut until I tasted a salmon my buddies BIL from Alaska cooked for us. Being a Texan, I didn't know that salmon could be so good. The stuff we get down here is the equivalent of buying shrimp in South Dakota. Just don't.

Been eating fresh king all winter. Been nice. Had a huge halibut break a rod this week. Probably would have cut her loose anyways. Raghorn had quite the fight for a little bit. It came to the surface and ran like king.

Used to say the same thing! .....until I tried P(acific) cod. Cleanest, whitest fish I've ever tasted. I won't eat catfish now and I'm from east Texas! LOL! Crappie are the only freshwater fish I've found to compare to P cod.
We all have different tastes and preferences.
I've seen people that will actually eat the fatty streak on any fish and savor it. That's about the most revolting taste I've ever put in my mouth. When I'm making dip out of smoked salmon, I'll remove the fat streak. I caught a big "buffalo" and took it home to show my dad. He went nuts! He showed me how to score the skin and pull the fish apart to keep the feather bones together. I was at work when my wife brought me a plate of "buffalo ribs" (not the animal!). FRIED FISH FAT ON A BONE! 😖 YUCK!!!!!
I went fishing with a buddy and his dad. I was I. invited for fish that afternoon. Sitting at the table, I noticed the dad eating some grey glop on a piece of bread. It was fish "gravy". I was offered some. To be polite, I accepted! SAD MISTAKE! Fish fat on toast! To be polite, I choked down that serving, but turned down seconds! EEEWWWWWWW!

Huge difference in texture and flavor between a 120# fish and a 30# fish. The bigger fish have that layer of fat that will also turn rancid in the freezer after 6 months making it taste like fish.
I load up on 20-30lb Halibut for my personal use. Some people load up on 10-15lb fish.
Hey, some folks apparently like grainy halibut and killing hens. Charter boats are full of pukers, but never have seen them tell their clients they are headed to chicken hole! Never seen one bleed them either.

My buddy and I had a rule that we wouldn’t keep halibut over 100#. We’ve had to throw 3 back that we estimate were 100#+. Small fish are much better eating.

I’m not a fan of the “lateral line” meat either and I remove it from the albacore when I cut them up. Halibut and salmon are frozen skin on.

They ain’t bad and if it was all we had, we would eat it up. We have a new run of hatchery dime bright chums showing up now. Apparently they are very good in the smoker but haven’t tried it yet. Big, hard fighting fish. Coho on steroids

In 2015, my bil* called and wanted to go to Kodiak fishing. I had been there a couple of times so I set us up a trip. First day, we're trolling for salmon. He's standing by an outrigger at the back of the boat when thd rod pops! The Cap'n was standing right there, grabbed the rod, shoved it in his hands and said, "This one's yours!" It almost snatched his 145 pound a$$ off the boat!!! He and that salmon danced around and around the deck. Everyone else watched as the Cap'n kept saying, "Turn him! He's gonna spool ya!" repeatedly! It took about 20 minutes to finally bring the beast to net! A 45 pound chinook! After the fish was cleaned, we discovered it was an "ivory" king! The ivory kings are a bit more oily that the pink kings.
P.S. - as I understand it, the "ivory" king is highly prized by connoisseurs.
* - when he arrived at the house to fly out, I figured out he had Parkinson's style palsy. Just before he passed, he told my wife he had tumors on his brain, lungs and liver! Glad I could take him on one last "Hurrah!".
