So I bought this for my wife in late January. She used it no more than 6 or 8 times, and there it sits. She prefers her Shun knives (I know, I know).
This is a completely handmade knife by Japanese smith Tashihiro Wakui. The blade is hand forged in the San Mai method where the inner carbon core (Hitachi White No. 2 steel) is sandwiched between an outer cladding of stainless steel. The choil and spine are rounded and polished, and the Kanji (Makers Name) is hand chiseled. The blade is given a "Kasumi" finish (meaning "mist" in Japanese).
I'd keep it except I already have a 165mm Santoku, as well as a 180mm Bunka and 180mm Nakiri. I'm all out of room for another 180mm.
I love Wakui knives - for the money, perhaps the best value smith out there. Beautiful grind, thin behind the edge, pronounced distal taper. His knives are Uber performers, and this knife is no exception.
This knife has NOT been sharpened and is essentially "as new." Includes box and papers.
