Lord, but I took on a terrible feed of deer fajitas for lunch. They were scrumptious.


Here's how the recipe wound up:

About 2lbs of venison cut to fajita size

Soak the meat in chicken broth for about 30 minutes.

Reserve half a cup of the broth for use later.

Sear the meat until nicely brown

mix in 1 packet of Old El Paso Fajita seasoning
add 1/2 cup of chicken broth
add 1/2 cup of Old El Paso Enchilada sauce (this stuff is can licking good )
add 1 8 oz can of whole pitted black olives
add 1 4 oz can of mushrooms

bring it up to a bubble very slowly.


Place Meat mixture on tortilla (I like the big flour burrito type myself)

Top with Colby and Monterrey Jack Cheese (I then nuke everything in the microwave for 30 seconds to melt the cheese to proper gooeyiness)

Add Salsa Verde and Sour Cream to taste


Eat like the proverbial hog at the trough


P.S. ( There was enough leftover for a snack while watching tv tonight ) grin

Got an elk roast in the crock pot, which should be ready about 2pm. So its going to be more like lupper than lunch, YUM! Hillbilly, I'm gonna have to try out your fajitas recipe this weekend.

Oh, watch the enchilada sauce, it comes in a mild and a hot version and the hot is a little too much of a good thing for me.

Went down to have lunch with my daughter in the caf� at the hospital where she works: Hummus wrap with feta cheese, sliced tomato and cucumber. Also vanilla yogurt with berries (real fresh berries, not just flavored) and granola on the top.

Made myself a little bit of personal tuna salad:

7 oz foil packet of tuna

Tablespoon of fat-free salad dressing (because that's what my wife buys)

Tablespoon of hot coarse-ground brown mustard

Teaspoon of dill pickle relish

Five anchovy-stuffed olives, chopped

Three or four (okay, six) dashes of Lousiana hot sauce

On crackers. Delicious.

Mannlicher, I think I have a dozen or so kinds of hot sauce. Got this one at a Dollar Store. It's called Kickin' Kajun and it's got a great flavor - which is damn unusual. Hot sauce is usually either vinegary (like Tobasco) or just hiked up with solvent-tasting capsicum extracts (like Dave's Insanity). My other fave is Arizona Gunslinger, which is made from fully-ripened red jalapenos. Again, good flavor to go with the hot.

But if you have another suggestion, I'm all�um, tongue, brother! The mailbox is empty!

I put two big pieces of left-over apple pie into a cereal bowl, and poured in some soy milk. Only problem was- when I sat down in front of the TV to eat ... My fork didn't work, I had to get up and go get a spoon.

Boy, It sure beats a bowl of Lucky Charms.

Went to a Judo tournament after downin' several bowls of the stuff. Puked much of the entire 4 hour ride there. Probably lost 3 or 4 lbs. and a bunch of energy.

Got 2nd, but was able to use those "Lucky" Charms as an excuse for not doin' better.

Can't even look at 'em when goin' down the cereal isle........

lft my lunch box at home but lucked out an found a granola bar stashed in the glove box of the work truck. Im nt even goona venture a guess on how old it was though.

Today for lunch....I had the steak from my anniversary dinner that I didnt finish last night, and a salad......oh and one of my docs was having a birthday so we had cake. In an ICU, there are los of days that I eat my lunch at the desk, or not at all. Today was a good day. I think all the nurses actually got to eat lunch today......sitting down in a chair at a table!

Hopefully you will get enough of them that you will quit naming them, and just assign them numbers. It's ok to name your rifles, though. wink grin
